What is Green pistachio Kernel?

Iranian green kernel is obtained through the harvest of unripe when the kernel has not yet turned yellow. The more unripe the pistachio, the moregreen the pistachio kernel will be. To have a high-quality green kernel, in addition to color uniformity and transparency, lack of chemical and microbial contamination is very important, which is observed in our company by the quality control unit and expert forces. Finally, it is divided into 5 main grades and exported to European countries according to customer requests and internally defined metrics.

How to produce Green Pistachio Kernel in Nazari company?

To produce this product, firstly pistachios are harvested as unripe and after drying and transferring to the break line, they convert to nuts. After the initial analysis and confirmation of the results by the quality control unit, the kernels are transferred to the boiling line to perform the duplication process. Double-skinned green kernels should be dried. The drying process is performed using wagon dryers to reach the maximum allowable humidity in a minimum of 48-24 hours. Further reduction of moisture makes the brain brittle and reduces its export desirability.

Applications of Green Pistachio Kernel:

Due to the early harvest, Green Pistachio Kernel do not have any problems with aflatoxins. This unique product is mainly used in confectionery and decoration of sweets and the food industry.
